What do you need to prepare sushi correctly? The answer is simple: you need specialized knowledge and, of course, professional tools – including Japanese knives created for precise work. If you want to better adapt your kitchen or restaurant to preparing sushi, be sure to check out the Japanese knives from our offer, which will take the results of your work to a whole new level. We have knives for fish, sushi, and sashimi that are suitable for both professional and non-commercial use.
What kind of sushi knife is right for you?
What are the characteristics of a Japanese sushi knife? It’s a slim knife, whose distinguishing feature is usually a long, narrow blade and a single-edged blade. Such a knife has a long, extremely precise blade, suitable for filleting fish, making fish carpaccio, and slicing, which is indispensable in the sushi-making process.

What’s the difference between a sushi knife and a sashimi knife? As it turns out, there doesn’t have to be a difference between them, which doesn’t mean it never happens. Sometimes a sashimi knife may have a higher blade and a beveled, sharp tip.
Do I need a professional Japanese sashimi knife at home?
If you want to make sushi or sashimi in accordance with tradition and all standards, a chef’s knife or other universal knife will not be suitable for this purpose. Japanese knives have special properties due to the shape and size of their blade and a properly fitted handle. This makes them perfect for cutting seafood, making it easier to separate meat from bones, and they slice and chop vegetables excellently.

With a sushi knife, you can perform truly precise work, the culmination of which will be an aesthetically pleasing dish. At home, you can prepare sushi that looks like it’s from a restaurant – a Japanese knife with the right blade length will make this easier for you.
Classic Japanese knives – how to care for them?
What is a classic Japanese knife made of? We’ll tell you: not from ordinary stainless steel, but high-carbon steel. Such a knife has optimal performance properties and is also easy to care for, but be careful – do not wash it in a dishwasher, as the detergent present in the process can have a negative impact on the handle, and the entire automatic washing procedure can… dull the knife.

It is also important to regularly wipe Japanese knives with a cloth during use. This is to prevent the blade from discoloring as a result of contact with acidic ingredients. The care of Japanese knives should be done using delicate materials – do not use a wire brush or a rough kitchen scourer for this. By properly caring for your Japanese knife, you’ll ensure that it always looks and works flawlessly.
You can buy Japanese knives with different blade lengths from us
Do you need a small Japanese knife for precise work at home? Or maybe you prefer a slightly larger model? In both cases, we offer you the right knives for cutting sushi and preparing sashimi, ensuring ergonomics when working with products such as fish, seafood, and vegetables.

When do you need a Japanese knife in your kitchen? If you’re a fan of a cuisine in which sushi and sashimi are an important ingredient, you appreciate the delicate taste of seafood and you appreciate it when fish is cut into aesthetic, thin slices, then a sushi and sashimi knife will help you achieve your culinary aspirations.

The offer of our store includes light, Japanese knives for fish with various parameters – including smaller ones, with a length of several centimeters, with a wide or narrow blade, and longer ones, above 21 cm, most often ending with a narrowed tip.
Care of Japanese knives – the handle
As mentioned, the blade of a knife for Japanese dishes doesn’t like aggressive cleaning treatments, but systematic drying with a cloth. What about the handle? It depends on what it’s made of.

If the sushi knife has an impregnated handle, it doesn’t require special care to look aesthetic. However, if the handle material is natural wood, it’s worth gently rubbing it with oil or a special product intended for this purpose a few times a year.
How much does a good knife for making sushi cost?
The prices of professional sushi and sashimi knives with optimal blade properties, enabling a precise, uniform motion, vary in our store. They start at around several hundred zlotys, but if you want something special, such as a yanagiba knife, be prepared for a slightly higher expense.

If you don’t know which knife for cutting products in your kitchen will be right for you, be sure to contact us. Stainless steel or carbon steel knife – which to choose?
On the market, there are sushi and sashimi knives made of stainless steel or carbon steel. Which one is better for Japanese cuisine? If you want a traditional knife, choose carbon steel, as it stays sharp longer. But keep in mind that this knife can be prone to rusting, so clean it properly and store it carefully.

A stainless steel sushi knife will, of course, be much less susceptible to moisture, but it will retain optimal sharpness for a shorter time. An alternative to these two types will be Japanese knives made of composite steel, which combine the advantages of both of these materials, but the excellent properties also come with a higher price.

We invite you to browse the products in our store, ask questions, and share your opinions with our company. We’ll be happy to help you choose the right knives, advise you on which handle will be most comfortable while cutting, and which products deserve special attention. With a knife from our offer, you can do kitchen work much faster, easier, and more accurately.
