Hideo Kitaoka Knives
Master Hideo Kitaoka’s knives are produced in Takefu, a province famous for producing the best kitchen knives for over 700 years. The knives are hand-forged and finished, giving them a unique character. Hideo Kitaoka kitchen knives are a series of professional knives in a traditional Japanese style, sharpened on one side, perfect for preparing sushi and sahimi.

Hideo Kitaoka Knife – characteristics
These knives have a three-layer blade, where the core is made of very hard carbon steel Shirogami (White Steel) and the outer layer is made of soft steel. Thanks to this technique, we get a knife with a blade hardness of 63+/-1 HRC, which has excellent cutting properties due to its very hard core. All knives are hand-forged and finished. The handle is made of Japanese rosewood and finished with a beautiful buffalo horn ferrule. Hideo Kitaoka knives are not stainless and require proper care.
