Yoshida Hamono Knives
Yoshida Hamono is a family-owned company with a very long tradition of hand-forging knives and tools. Yoshida Hamono specializes in particular in the production of knives from ZDP-189 powder steel.
The knives from the Black ZDP-189 series, forged using the SAN-MAI technique, have a three-layer blade where a very hard core is forged from ZDP-189 steel and the outer layers are made of soft stainless steel that protects the core. Thanks to the San-mai technique, the blades are durable and flexible. In the heat treatment process, these knives achieve a very high hardness level of 65-67 HRC.
The Kuro-uchi blade finish is an untreated (black) steel that gives these knives a unique Japanese look. The blades also show traces of hand-forging, light dents, which makes each kitchen knife unique and one of a kind. The traditional Japanese octagonal handle in the “WA” style is made of dark walnut wood and is very comfortable for both right- and left-handed people. The knives from the Black ZDP-189 series embody the features of the best kitchen knives: the best ZDP-189 steel, functionality, and a beautiful traditional finish.
