The traditional Fujiwara Kiridashi knife in the Japanese style has a blade with a length of 21 mm. These knives have a long history of use in the Land of the Rising Sun, where they were used for carving wood and its processing, or also as marking knives. Nevertheless, they are currently very popular among professional chefs and home cooking enthusiasts, who find them to be a practical accessory and use them as utility knives. The history of making these extremely handy Kiridashi knives in the small family company Fujiwara goes back as many as three generations. Their blades are forged from steel called Shirogami #2. It is this steel that makes them hold their sharpness well and makes each of them exceptionally easy to sharpen.
