A long, very thin knife with a willow leaf-shaped blade, perfectly suited for slicing and filleting fish. The Yanagiba or Yanagi (“willow blade”) is a type of knife that originates from Western Japan (the Kansai region). It was designed differently from European knives, as it should be used to cut in only one direction—towards you (the “hiki kiri” technique). The traditional single-sided grind provides control during precise tasks and speeds up the knife’s sharpening. Global kitchen knives are famous for combining phenomenal effectiveness with elegant design. They are lightweight and perfectly balanced, and their thin, hard, and durable blades maintain perfect sharpness for a long time. Thanks to the seamless construction, the knives are hygienic, fit better in the hand, and are easier to clean and sharpen. The individually balanced handle is designed to reduce fatigue and prevent slipping from the hands. Global knives, designed in 1985 by Komin Yamada, have won many international awards and enjoy the unwavering recognition of the greatest masters of cooking—both professionals and home chefs.
