The Hado Ginsan Sakura line of high-quality Japanese knives is handmade from A to Z. Shogou Yamatsuka (forging the blades) and Tadataka Maruyama (finishing and sharpening) are responsible for the individual stages of production. These knives have a core made of Ginsan steel, i.e., Silver#3, which is surrounded by cladding made of stainless steel. Each blade is subjected to hardening, which ensures their high hardness, reaching a level of 62-63 HRC. It’s this hardening, along with the steel heat treatment, that makes Hado Ginsan Sakura knives maintain their sharpness for a long time, as well as being extremely easy to sharpen.
