The handmade series of Hado Ginsan Kijiro kitchen knives is characterized by a beautiful appearance and the highest quality. Shogou Yamatsuka is responsible for forging them, and each knife is finished and sharpened by Tadataka Maruyama. Their characteristic feature is the core made of Ginsan (Silver#3) steel, surrounded by stainless steel cladding. The production process includes a hardening stage, as a result of which the blades become very hard (around 62-63 HRC). The applied hardening method, along with the steel heat treatment, makes them exceptionally easy to sharpen. Additionally, thanks to this, the knives remain very sharp for a long time. The beautiful octagonal handle is made of cherry wood. Its specific Japanese shape contributes to its extraordinary comfort of use. The handle of each knife is painted with a Japanese lacquer called Kijiro.
