The Hado Junpaku Urushi chef’s knife, which has a 210 mm blade, is a universal kitchen tool. It can be used not only for chopping but also works great for slicing large pieces of meat.
The handmade Hado Junpaku knife collection has many advantages and is valued among professional users and cooking enthusiasts. The blades were forged by Yoshikazu Tanaka and finished and sharpened by Tadataka Maruyama. Made of Shirogami#1 (White#1) carbon steel, the core is protected by special cladding, for the production of which stainless steel is used. The applied hardening process gives the blades a hardness of around 63-64 HRC, while together with steel heat treatment, it also contributes to maintaining sharpness very well and exceptionally easy sharpening. The handle made of oak wood has an octagonal shape, and its beautiful appearance is due, among other things, to lacquering.
Japanese Hado kitchen knives can be recommended to all users who expect absolute quality. Perfect for professional chefs, as well as lovers of the art of cooking who also appreciate the craftsmanship of blacksmithing from the Land of the Rising Sun.
