The Bunka kitchen knife has a wide blade profile and is a universal tool for kitchen work. It’s a combination of the valued Gyuto knife and Nakiri, providing the best utility advantages of both.
The handmade collection of excellent Hado Sumi kitchen knives is not only beautiful but also very practical. Yoshikazu Tanaka is responsible for forging the blades, and Tadataka Maruyama is responsible for their finishing and sharpening. Carbon steel called Shirogami#2 (White#2) is used to make the core. Soft iron cladding surrounds and protects the core. The unique black Kurouchi finish gives the blades a raw character. Their exceptional hardness results from the hardening process, which results in a value of 62-63 HRC. Also, thanks to hardening and steel heat treatment, the blades are easy to sharpen and maintain their sharpness for a very long time. The two-color octagonal handle with a beautiful appearance is made of oak wood.
Hado is a valued brand of kitchen knives that meets the needs of the most demanding users. They are perfect working tools for professional chefs, as well as amateurs interested in the art of Japanese blacksmithing. After each use of knives from this collection, they should be dried, as they are not stainless.
