The Hideo Kitaoka Aogami 2 Yanagiba knife with a 300 mm long blade is the main type of knife used by sushi masters. The Yanagiba knife is ideal for working with the preparation of both sushi and sashimi. This type of knife comes from Kansai – from the Osaka region.
The advantage of Master Hideo Kitaoka’s knives is that they are hand-forged and finished in the same way. This gives them an extraordinary character and makes them unique. The professional series of knives in the traditional, Japanese style is used during the preparation of sashimi and sushi. The blade core is made of exceptionally hard Aogami 2 carbon steel, also known as Blue Steel and is hardened to a hardness of 63 – 64 HRC. The blade has a MIGAKI finish. The knives have a beautiful handle made of ebony wood, which is decorated with a pakkawood ferrule.. They require proper and regular care, as they are not stainless.
