Usuba is the twin brother of Nakiri, its purpose is to slice vegetables and cut them into small pieces. Unlike Nakiri, Usuba is single-edged. Many chefs consider this an advantage due to the simplicity of sharpening this type of knife. Kamagata differs from traditional Usuba in that it has a semicircular blade tip – a shape very similar to Santoku. It greatly facilitates the rolling of vegetables for decorative purposes and cutting them into thin slices.
