Ittoutan Shirogami Yanagiba should be in the basic equipment of every sushi master. The 240 mm long knife has a long and narrow blade, which allows for precise cutting and slicing. The Ittoutan Shirogami kitchen knife series is known for its high quality and perfect reference to the traditional style of the Land of the Rising Sun. It includes single-edged knives that make it easy to prepare classic Japanese dishes, namely sushi and sashimi. The blades are three-layer and are produced using a special hardening method. Thanks to it, their hardness reaches up to 62-63 HRC. It is worth paying attention to the core of Ittoutan Shirogami#3 knives, which is made of hard carbon steel called Shirogami#3 (also White Steel no.3). Soft steel is used to create the outer layer. The technique used makes the blade extremely durable, and the knife has excellent cutting properties. The handle, finished with an aesthetic ferrule, was made of Japanese HO wood. Each of the Ittoutan knives was hand-forged and finished. Since they are not stainless, they require proper care after use.
