The Kanetsugu Pro-M utility knife with a 130 mm blade will be useful for more precise work with smaller products. Kitchen knives from the Kanetsugu Pro-M series are classic Japanese knives in the Western style. The blades are forged from a single piece of stainless AUS-8 steel using the “monosteel” technique. During hardening, the knives are subjected to a special heat treatment (the so-called “sub-zero treatment”), during which the blades are cooled drastically to a temperature of -70 C°, giving them a hardness of 59+/-1 HRC. What distinguishes these knives are their amazing cutting properties, which we owe to the appropriate hardening and the convex grind, the so-called “hamaguri ba.” The finish of the knife and the fit of the handle are unmatched by other knives in this price range. The handle is made of dark pakka wood, which has been properly impregnated – it is completely resistant to moisture. The specially profiled handle is very comfortable, ensuring a secure grip while working in the kitchen. Seki Kanetsugu is a manufacturer from the city of Seki in Japan, which is famous for the production of kitchen knives. The company was founded in 1918 by Matsujiro Kawamura, a descendant of Kanetsugu, a famous maker of samurai swords (1336-1392).
