Kanetsugu Miyabi Issin Chef’s Knife 210 mm

A knife for most kitchen tasks, the Kanetsugu Miyabi Issin Gyuto with a 210 mm blade is the Japanese equivalent of a chef’s knife. Knives from the Kanetsugu Miyabi Issin series are made of high-carbon stainless steel in a three-layer construction, known as SAN-MAI. The use of this method means that the core of the knife has been forged from hard high-carbon “AUS-8” steel, which has then been clad with soft SUS-410 steel. Thanks to this, the hard AUS-8 core is protected by the outer layers of soft SUS-410 steel, which also adds flexibility. During the hardening process, Miyabi Issin knives achieve a hardness of 57-58 HRC, which means they hold their sharpness for a long time and are easy to re-sharpen. The handle is made of natural brown rosewood and reinforced with two rivets. The wood used to produce the handle has been properly impregnated and is resistant to moisture and temperature. Knives from the Miyabi Issin series are recommended for both professionals and enthusiasts who are just starting their adventure with Japanese knives. Seki Kanetsugu is one of the oldest manufacturers of kitchen knives from the city of Seki in Japan.
