The Kanetsugu Miyabi Issin with a blade length of 150 mm is a small and handy knife used wherever we need greater precision when working with small products, such as shallots, mushrooms, or smaller pieces of meat and fish. Kanetsugu Miyabi Issin is a series of kitchen knives with a three-layer construction, made in the popular Japanese “SAN-MAI” technique. The use of this technique means that the knife’s core is made of hard, high-carbon “AUS-8” steel, which has been clad with soft and completely stainless SUS-410 steel. Thanks to the use of such a technique, the hard AUS-8 core is protected by outer layers of soft SUS-410 steel, which also provides additional flexibility. In the heat treatment process (hardening), the knives achieve a hardness of 57-58 HRC, thanks to which they hold their sharpness and are easy to sharpen. The handle is made of natural rosewood and reinforced with two rivets. The wood used to produce the handle has been properly impregnated, making it resistant to moisture and temperature.
