The Kanetsugu Pro-M Santoku 170 mm is a universal and handy kitchen knife, with which we can perform most kitchen tasks. The Kanetsugu Pro-M series of kitchen knives are very popular knives from this Japanese manufacturer in the classic Western style. The blades of these knives are forged from a single piece of AUS-8 stainless steel in the so-called “monosteel” technique. During hardening, the steel undergoes heat treatment, the so-called “sub-zero treatment”, during which the blades are rapidly cooled to a temperature of -70 C°. As a result, the blades achieve a hardness of 59+/-1 HRC. These knives are distinguished by very good cutting properties, which we owe to the proper hardening and the convex grind “hamaguri ba”. It is worth noting that the finish of the knife and the fit of the handle are unheard of among other knives in a similar price range. The handle is made of dark pakka wood, which has been impregnated, making it completely resistant to moisture. The ergonomically profiled handle is very handy and provides a secure grip, even during long hours of work in the kitchen. Seki Kanetsugu is a manufacturer from the city of Seki in Japan, famous for producing kitchen knives. The company was founded in 1918 by Matsujiro Kawamura, a descendant of Kanetsugu, a famous maker of samurai swords (1336-1392).
