The Kanetsugu Pro-M chef’s knife with a 240 mm blade is a universal type of knife that works perfectly for both chopping vegetables and filleting fish. Kanetsugu Pro-M is a series of very well-made kitchen knives, made entirely of stainless molybdenum-vanadium steel. The blades of these knives are forged from a single piece of steel called AUS-8, in the so-called “monosteel” technique. During the hardening of AUS-8 steel, the Kanetsugu company subjects it to a special heat treatment (the so-called “sub-zero treatment”), during which the knives are cooled instantly to a temperature of -70 C°. Thanks to this process, the blades achieve a high hardness level of 59+/-1 HRC. The Pro-M series knives have unique cutting properties, which we owe to the proper hardening and, to a large extent, the convex grind, the so-called “hamaguri ba”, which makes it very easy to separate food from the blade during cutting. The finish of these knives, the blade profile, and the handle fit are at a very high level. The knife handle is made of dark pakka wood, which has been impregnated – it is completely resistant to moisture. The ergonomically profiled handle is very comfortable and provides a secure grip, even during long hours of work in the kitchen. The company was founded in 1918 by Matsujiro Kawamura, a descendant of Kanetsugu, a famous maker of samurai swords (1336-1392). Seki Kanetsugu is a manufacturer from the city of Seki in Japan, which is known worldwide for the production of kitchen knives.
