The slender Kanetsugu ZUIUN Sujihiki 240 mm knife is used primarily for slicing, but will also work well for preparing sushi or filleting fish. The unique series of Kanetsugu ZUIUN damascus knives was created to celebrate the 100th anniversary of the Seki Kanetsugu company. One of the best steels on the market, SPG2 (R2), was chosen for the production of these knives – an ideal compromise between high hardness, ease of sharpening, and long-lasting edge retention. The blades were made using the “SAN-MAI” technique, which means that the core of the “SPG2” powdered steel was clad with 63-layer damascus steel with a spectacular contrasting pattern. During hardening, these blades were given a hardness of 62-64 HRC, thanks to which they stay sharp for a long time, and SPG2 steel is relatively easy to sharpen. Kanetsugu ZUIUN offers one of the best cutting properties – a fairly thin blade combined with the convex Hamaguri Ba grind, will satisfy even the most demanding users. The ergonomic and aesthetic heptagonal (seven-sided) handle is extremely comfortable, even during long-term work with the knife. The handle is made of pakkawood and has a beautiful decorative pin and a light insert. All knives from this series are packed in elegant wooden boxes, which makes them an ideal gift idea. Seki Kanetsugu is a knife manufacturer in Seki, Japan. His ancestor was Kanetsugu (1336-1392), a famous maker of samurai swords. The company was founded in 1919 and is currently one of the oldest manufacturers of kitchen knives in Japan.
