The universal, small, and at the same time handy Masashi White 2 Nashiji knife with a blade length of 120 mm is especially useful for processing small food products – such as garlic, mushrooms, or shallots. These knives are made by Masashi-san himself, starting from forging the steel, then applying the grinds and sharpening the blade. He also personally sets the handles of the knife. Currently, Masashi-san lives in Sanjo, Japan, and is a completely independent kitchen knife manufacturer. The blade of these beautiful and unique knives is made of 3 layers and is created using the SAN-MAI technique. In knives from the Masashi Nashiji Shirogami2 series, the core is extremely hard, as it is made of Shirogami#2 carbon steel. In turn, the outer layers are made of soft stainless steel. They protect the core. The San-mai technique guarantees that the blades are flexible and durable. Thanks to heat treatment, the knives become very hard. They are characterized by a hardness of 62-64 HRC. In turn, the characteristic Japanese design is provided by the Nashiji blade finish. The classic Japanese octagonal handle in the “WA” style is made using light magnolia wood. It fits very well in the hand of both right-handed and left-handed people.
