Resembling a cleaver in appearance, the Japanese Masutani Kokuryu Nakiri 165 mm knife works best for mincing and cutting vegetables. In contrast to a cleaver, it has a thin blade that is ideal for this purpose. Hand-made Japanese Masutani kitchen knives are the result of the work of a talented blacksmith from Echizen (in the Fukui prefecture). They can be compared to knives with much higher prices, and at the same time, they are characterized by an excellent quality-to-price ratio. The high-carbon stainless steel VG-10, from which the core of the knives is made, ensures their durability. The outer layers of the blade are made of Damascus steel (more specifically, 31 layers), which, in combination with the unique “Tsuchime” finishing technique, gives a unique and beautiful hammered effect. Thanks to hardening, the hardness of the blades reaches 61-62 HRC. They also maintain their sharpness for a long time. The pakkawood, famous for its high resistance to moisture and temperature, is used for the handle. It has a spectacular blue color. These knives can be recommended to all amateur home cooks.
