The Masutani Santoku 165 mm kitchen knife is a very handy and versatile tool. It is the Japanese equivalent of a chef’s knife. Hand-made by a skilled blacksmith, Masutani knives are characterized by an excellent quality-to-price ratio. They are made in Echizen in the Fukui prefecture, and their definite advantage is that they are comparable to other, much more expensive models. They have a core made of high-carbon stainless steel called VG-10, while the outside is covered with 31-layer Damascus steel. This is what gives the blades such a spectacular look. Each knife has undergone a hardening process, as a result of which the hardness reaches a high level of 61-62 HRC. Thanks to this, they remain sharp for a long time of use. The pakkawood handle is resistant to temperature and moisture. This is an ideal option for cooking amateurs and home cooks whose adventure with Japanese knives is just beginning.
