A kitchen knife with a versatile use – the Masutani Santoku 170 mm – is very handy and useful for culinary work. It is the Japanese equivalent of a classic chef’s knife.
Masutani Japanese knives are produced manually in the Fukui prefecture, in Echizen. They are made by a talented blacksmith, thanks to whose work they have an excellent quality-to-price ratio. These knives are even comparable to much more expensive models. As for their core, it is made of high-carbon stainless steel VG-1, and the outer layers are made of hammered steel, giving them a uniquely attractive appearance. The hardness of the blades is 61 +/- 1 HRC and is obtained in the hardening process, which also makes them remain exceptionally sharp for a very long time. The well-known pakkawood is used for the handle, which provides resistance to both moisture and temperature. The Masutani series knives are recommended especially for people who are engaged in amateur cooking, as well as those who are taking their first steps with Japanese kitchen accessories.
