Miyagoshi Sakura 2000 – Finishing Stone (#2000)
Miyagoshi Seito (宮越製陶) is an artisanal workshop from Kyoto, specializing in the production of durable whetstones made using the vitrification process. The Sakura 2000 model is a water stone with a grit that lies between medium and finishing, intended for the precise finishing of blades, especially kitchen knives made of carbon or stainless steel.
Fired for 36 hours at a temperature of about 1300°C, this stone is characterized by a hard structure, uniform abrasion, and very low material wear. The average grain size is about 6.7 microns, making it an ideal tool for giving the blade a clean and fine cutting texture.
Application of #2000 grit
The 2000 grit is the beginning of the finishing range, recommended for:
- achieving a smooth, uniform cutting edge,
- removing micro-burrs created after sharpening on 400–1000 grits,
- improving sharpness and preparing the blade for polishing on higher grits (e.g., #3000+).
Thanks to a proper balance of abrasion and precision, the Sakura 2000 works well both as the final stone in daily knife care and as an intermediate stage in more advanced sharpening systems.
