Morihei Hishiboshi Hi 8000 is a high-grit synthetic stone intended for the final finishing of kitchen knife edges. This is a stage that provides not only exceptional sharpness but also an impressive finish.
The Hishiboshi Hi series was designed to replicate the sensations of working on Japanese natural stones (JNAT). Thanks to an admixture of natural material and the creation of an abundant slurry during sharpening, the stone provides a feel similar to natural stones and allows for a subtle kasumi finish. Working with this stone is smooth, and the feedback from the working surface is particularly clear even with delicate movements.
The #8000 grit classifies this model as an ultrafine polishing stone. This stone is recommended both as the final step of sharpening and as preparation for working with a #12000 stone or a leather strop.
A splash & go stone—ready to work without soaking. Just moisten the surface with water, and for a better start, you can also open up the working structure with a nagura stone. The slurry should not be removed during sharpening—it contains active abrasive particles that are crucial for the polishing process.
Compared to the Shapton and Naniwa series, Morihei Hi stones are characterized by greater durability and thickness (25 mm), which translates into their longevity and comfort for daily use.
