The universal Muneishi Kiritsuke chef’s knife has a blade length of 210 mm. It will be useful in the kitchen during most kitchen tasks.
What distinguishes the unique series of Muneishi kitchen knives is, above all, the perfect blade profile. The Warikomi production technique uses soft iron claddings. They surround a hard core made of Aogami #2 carbon steel. The exceptional hardness of the blades (reaching 63-64 HRC) is possible thanks to the hardening process. It is thanks to hardening and heat treatment that Muneishi knives can be sharpened without any problems, and they also maintain this sharpness for a long time. The knives are characterized by a raw character thanks to the beautiful black blade finish, called Kurouchi. In turn, their oval handle is made of cherry wood, and its original finish is an aesthetic red ferrule.
Care is essential for Muneishi knives after each use. Washing and drying the knife prevents rust from appearing.
