The Naniwa guide is a very useful and easy-to-use tool that helps maintain a constant angle when sharpening knives on water stones. It therefore solves the problem of many people who consider this issue to be the most difficult part of the whole task. Just slide the guide onto the spine of the knife, around the middle of the blade length. After making sure that the guide is tightened firmly and the blade is fully seated in it, you can start working. The Naniwa guide used for sharpening Japanese knives does not have an adjustment. The sharpening angle it provides depends on the width of a given knife – it is about 15º (the greater the width of the knife, the more the sharpening angle decreases).
