The Suehiro Cerax 1000 is a fast and effective ceramic stone with a very high concentration of abrasive material. Its 1000 grit makes it the most universal and versatile sharpening stone. We recommend it for regular knife sharpening as well as for creating a new cutting edge. Sharpening can be continued on a Cerax 6000, Ouka 3000, or Rika 5000 stone. The Cerax 1000 also increases the contrast between hard and soft steel (Hagane and Jigane), giving a Kasumi finish. Cerax stones are of medium hardness; remember to soak them for a short, 5-10 minutes before sharpening.
