A gyuto is a multi-purpose knife, its shape is based on a typical European chef’s knife. It’s a highly versatile knife, suitable for slicing meat, filleting, and chopping. A gyuto with a traditional Japanese handle is called a Wa-Gyuto. The Takahisa Damascus Octagon is a series of knives that combines beautiful craftsmanship with functionality. The blades of these knives are made of 17-layer Damascus steel with a core of the iconic high-carbon VG10 steel. The blades have a beautiful “Tsuchime” finish, which gives them a unique and impressive appearance. Thanks to this technique, we get a knife with a blade hardness of 61+/-1 HRC, which has excellent cutting properties due to its very hard core. The handle in a traditional Japanese octagon shape is made of mahogany wood and is very comfortable to use.
