A Nakiri is a western-style knife sharpened on both sides, a Japanese equivalent of the Usuba, which looks like a small cleaver. However, unlike a cleaver, it has a very thin blade, making it an ideal knife for chopping and slicing vegetables. These knives have a three-layer blade, where the core is made of hard, high-carbon steel, and the outer layers are made of soft 13-CHROME steel. Thanks to this technique, we get a knife with a blade hardness of 60+/-1 HRC, which has excellent cutting properties due to its very hard core, while the outer layers of soft steel protect the core and provide flexibility. The handle is made of black reinforced “eco wood” produced under very high pressure from wood dust. This series is sharpened on both sides. We recommend it primarily to home cooks and those starting their adventure with Japanese knives.
