The multi-functional Tsunehisa Nami Bunka kitchen knife with a blade length of 170 mm is perfect for cutting meat, fish and vegetables. Bunka is a Japanese knife that is useful for everyday tasks in the kitchen. It can be used for mincing vegetables, as well as cutting larger pieces of fish or meat. Each knife from the Nami collection has been hand-forged in Japan, in the Tosa region. A characteristic feature of this series is the beautiful blade made of 33-layer Damascus steel, which has a look resembling sea waves. The core of the knives is made of stainless steel, which is called AUS-10. It is highly durable, and also holds sharpness very well. The hardening process used gives the knives a hardness of around 61 +/- 1 HRC. The blades are finished with a high gloss, which gives them a beautiful character. The handle has an octagonal shape and a traditional Japanese character. It was made from a single piece of Japanese oak. The name of the Nami series, meaning “wave,” was taken from the unique appearance of the Damascus steel.
