The Tsunehisa Nami Sujihiki kitchen knife, with a narrow and long blade measuring 240 mm, is a tool specially created for the precise slicing of thin slices of meat and fish. However, its versatility also allows it to be used in a variety of culinary tasks where the highest precision is required. These unique kitchen knives from the Nami series are made in the Tosa region of Japan, where experienced blacksmithing craftsmen manually create their excellent blades. The blades are made of durable AUS-10 stainless steel, known for its durability and ability to maintain sharpness. Around the core of the blade are 33 layers of unique Damascus steel, creating a beautiful pattern resembling sea waves – hence the name of the Nami collection, which means “wave” in Japanese. The hardening process gives the blades a hardness level of 61 +/- 1 HRC, and the high-gloss finish adds to their elegance. The classic octagonal handle in the Japanese style is made from a single piece of Japanese oak, which emphasizes their authentic character.
