The Yu Kurosaki Raijin Gyuto 210 mm Cobalt Special knife, inspired by the Japanese god of thunder, is distinguished by its unique design that evokes rain falling during a storm – which also perfectly reflects its name! Many of Kurosaki-san’s knife collections use high-grade stainless steel, and Raijin is no exception. Cobalt Special is an extraordinary steel, similar to VG10 but reinforced in a unique way. Its fine grains in the steel’s structure allow for an incredibly sharp blade, while maintaining ease of sharpening. The characteristic blade profile is a hallmark of this master blacksmith’s work, which also impresses in the case of Raijin. The cutting edge is impressively sharp right from the start. The blade is combined with a solid octagonal handle made of cherry wood and decorated with a red ferrule. The blade profile has a universal shape that allows for both typical “rocking” motions and other cutting styles. The use of stainless steel makes it easy to keep the knife clean, even in a heavily used kitchen. However, it is primarily its aesthetics that attract attention from the first glance, and Yu Kurosaki, as always, creates a true work of art.
