The BWH series of knives is inspired by the MV-H line, with the same molybdenum-vanadium, high-carbon stainless steel MBS-26. This steel undergoes a three-stage hardening process, reaching a hardness of 58-59 HRC. The knife blades are carefully shaped by artisans with over 30 years of experience, which gives them exceptional sharpness, reaching a level that distinguishes them from others. The knife handle is made of Black Pakkawood, which consists of many layers pressed under high pressure and at high temperature, creating an exceptionally durable material resistant to moisture and water. The wood with an antibacterial coating is easy to care for, resembling plastic, and the handle is securely fastened with three precisely set and polished rivets. The knives from this series are sharpened on both sides, but in contrast to most Western manufacturers, Masahiro uses asymmetrical sharpening in a ratio of 80/20. This means that the cutting edge is shifted towards one of the knife’s axes. Asymmetrical sharpening allows for a thinner cutting edge, up to 35% compared to traditional, symmetrical blades, which translates into greater sharpness.
