The knives from the MV series are made of high-carbon stainless steel MBS-26, enriched with molybdenum and vanadium. This steel has undergone a three-stage hardening process, reaching a hardness of 58-59 HRC. Each blade is precisely finished by experienced artisans with over 30 years of experience, which gives Masahiro knives their exceptional sharpness and quality.
The handle with antibacterial properties is made of laminated Black Pakkawood. This material, thanks to its multi-layer structure pressed under high pressure and temperature, is characterized by exceptional durability and resistance to moisture and water. The wooden handle is reinforced with three precisely set and polished rivets, and an additional metal reinforcement between the handle and the blade provides even greater strength and stability.
The knives from this series have double-sided sharpening, but Masahiro uses a unique asymmetrical sharpening in a ratio of 80/20. This means the cutting edge is shifted relative to the knife’s axis to one side. This type of sharpening provides a thinner cutting edge, up to 35% compared to symmetrical blades, which translates into much greater sharpness.
