Thanks to a special heat treatment, which includes a three-stage process of hardening, cooling at a low temperature, and tempering, the material reaches a hardness of 58-59HRC. The secret of this process is known only to the Hattori family. This steel allows for achieving exceptional blade sharpness and long-term maintenance of high cutting edge aggressiveness, which is valued by users worldwide. MBS-26 belongs to the group of stainless steels, is resistant to reactions with acids, and does not change color or smell in contact with acidic products. Keeping the knives in perfect condition and shine is easy; just wash them in lukewarm water with dish soap, and after washing, they should be thoroughly dried.
