The MBS-26 steel, used to produce the knives in this series, is a unique alloy of carbon (0.85-1.00%), chromium (13-15%), and molybdenum, manganese, and vanadium. Thanks to a special heat treatment, which includes a three-stage process of hardening, cooling at a low temperature, and tempering, the material reaches a hardness of 58-59HRC. The secret of this process is known only to the Hattori family. This steel allows for an exceptional blade sharpness and long-lasting maintenance of a high cutting edge aggressiveness, which is valued by users worldwide. MBS-26 belongs to the group of stainless steels; it is resistant to reactions with acids and does not change color or smell when in contact with acidic products. Keeping the knives in perfect condition and with a shine is easy; just wash them in lukewarm water with dish soap and dry them thoroughly after washing.

The knife’s handle, made of pakkawood, has a simple but functional shape that gives it a unique character. The perfectly polished surface, with no visible rivets, ensures comfort during use, even during prolonged work with the tool.

 

The Sankei series was designed mainly with cooking amateurs in mind but will also work well in the demanding conditions of a professional kitchen. It consists of six basic models: a chef’s knife, santoku, a paring knife, a smaller utility knife (15 cm blade length), a slicing knife, and a bread knife.
