It must be mentioned here that even before leaving the production plant, Japanese kitchen knives are subjected to the sharpening process – precisely with the use of proven sharpening stones. Before starting to sharpen, it is necessary to soak the sharpening stone in water for a few minutes (it should not be allowed to be dry during work). Sharpening stones – a way to quickly and precisely sharpen knives
A good quality knife makes work in the kitchen easier, but a good sharpener is no less important, as it helps keep knives in perfect condition. A properly prepared chef’s knife makes it easy to use and speeds up work. As you know, every blade becomes dull over time, especially during intensive use. Whetstones for sharpening knives are unique sharpeners that allow for quick, extremely precise, and, above all, effective sharpening.
Among many popular sharpening tools, stones are distinguished not only by their appearance, but also by the way they are used and the amazing results that can be achieved with them. Properly selected and correctly used **whetstones** are the best way to sharpen knives. Good stones can even repair and save a blade, and a sharpened knife is, contrary to appearances, much safer to use than a dull one.

If you have not used a sharpening stone before, we are convinced that it will become an indispensable tool in your kitchen after the first use. It is worth noting that **whetstones are able to handle many blades of various sizes, shapes and thicknesses**. You can even sharpen blades made of hard steel with them. Whetstones not only for sharpening knives
**Sharpening stones make it possible to sharpen not only kitchen knives, but also many other tools used, among others, in carpentry, agriculture and gardening.** They are perfect for sharpening scissors and penknives, as well as razors and planers, and they will also do a great job of sharpening a chisel or an axe, you just need to choose the right stone.
If the chisel blade is chipped, use a coarser stone – 80 to 700. It is very important not to change the factory angle of the blade. When properly sharpening a chisel on a stone, a gradation of 800 to 3000 is used. Finer stones are used to remove burrs (4000-6000) and polishing (8000 and more).
How to use whetstones correctly?
The name whetstones is not accidental, because water is needed for their operation. For the sharpening process to be as effective as possible, it is necessary to pre-soak the stone – it is enough to immerse it in cold water for a few minutes.
**The whetstone for sharpening knives must not be dry during work**, the stone sharpener is suitable for sharpening only when it is completely soaked with water. How can you tell? When air bubbles stop coming out of the stone after placing it in water, it is a sign that the stone is ready to work. You usually have to wait about 5-10 minutes.

To achieve maximum sharpness of the knife, an appropriate angle of inclination between its blade and the stone is also necessary, it should be about 15 degrees. When using a whetstone, it is recommended to hold the knife with both hands, which makes sharpening safer and, above all, more precise. It is also important not to change the factory angle of the knife blade while sharpening. During work, the stone should be constantly poured with water – it is thanks to it that a slurry is formed on the surface of the stone, which acts as an abrasive material. After sharpening, just rinse the knife with water and dry the stone. Regular sharpening will provide the best results.
Types of sharpening stones and their application
A large assortment of available stones can be a problem for someone who has not dealt with them before, but choosing the right one is not as difficult as it may seem. Whetstones have different shapes and dimensions, but regardless of their appearance, they differ primarily in gradation, i.e. the amount and size of abrasive particles on their surface, thanks to which sharpening is possible.
**Whetstones with low gradation, i.e. values from 200 to 1000** are the roughest and are best for sharpening blunt and even chipped blades, while a gradation of 1000 to 8000 and higher creates a finer and more delicate abrasive surface, intended for preliminary sharpening and polishing the cutting edge.
When sharpening very dull knives with visible chips on the blade, you should always start with low-grit stones and finish sharpening with high-grit ones. Some stones should contain tungsten carbide.
How to choose the right whetstone?
To make your choice easier, each of the available stones contains information about the gradation and tips on the purpose of a particular sharpener and a detailed description of how to use it. If you have any doubts about the choice of stone, a double-sided stone may be the perfect and most universal solution, i.e. one that combines various parameters, thanks to which it allows you to sharpen and polish many tools.
