Kanetsugu Saiun knives are a combination of beauty and functionality. Their blades have eye-catching blades made of 33-layer Damascus steel. The core of these knives is forged from stainless VG-10 high-carbon steel and hardened to a level of 61+/-1 HRC, thanks to which the sharpness is maintained for a very long time. During hardening, the knives are subjected to a “sub-zero treatment” process, which consists of cooling the blade to a temperature of -70 C°. The drastic cooling of the knife makes the blade harder and maintain sharpness for longer. The outer layers of the knife are made of 65-layer Damascus steel, polished to a high gloss. Additionally, the Damascus steel that clads the hard VG-10 steel core protects it and gives the whole thing greater flexibility. The impressive and very comfortable handle is made of Spanish micarta, a material that is completely resistant to moisture and temperature changes, making it perfect for the kitchen. The handle is additionally reinforced with two rivets. The aesthetic red spacer gives the handle an elegant look. The Seki Kanetsugu manufactory was founded in 1918 by Matsujiro Kawamura, a descendant of Kanetsugu, who first began forging samurai swords in 1345.
