Japanese kitchen knife Tosa Tsukasa Kurouchi Gyuto 120 mm Shirogami #1
Discover the extraordinary Tosa Tsukasa knives, hand-forged in the Tosa region on Shikoku Island, Japan. These rustic knives with a unique, slightly curved profile and a somewhat narrower blade are sturdy, allowing them to be used for practically any cutting task, yet elegant enough for slicing small products such as fruits and vegetables.
This knife series is made from Shirogami #1 steel. It is the purest variety of carbon steel. The advantage of Shirogami is that it can be sharpened sharper than other types of steel. It is also easy to sharpen on your own.
The knife has a Kurouchi finish (which means a dark forging layer). This somewhat protects the knife from rusting, although it is always advisable to thoroughly clean and dry the knife after use. The entire knife is made of carbon fiber, which means it can discolor (patina forms). Therefore, it is important to properly care for the knife.
Tosa Tsukasa Kurouchi knives are highly recommended for those who want to cut with the sharpest steel and are not afraid of a bit of maintenance. The knife is quite sharp right out of the box but becomes truly razor-sharp if you sharpen it yourself on stones.
These knives are not stainless and should be dried after each use.
