The Tojiro Shirogami Deba 180 mm differs from other types of Japanese knives with its thick and heavy blade. It is this feature that ensures comfort and efficient work when performing heavier kitchen tasks, such as filleting large fish, preparing fish, and cutting off heads. The professional series of Japanese-style kitchen knives—Tojiro Shirogami—draws from the Japanese tradition of hand-forging knives. These knives, thanks to their excellent parameters, are suitable for preparing sushi as well as sashimi. Having a three-layer blade, they achieve a hardness of 61 +/- 1 HRC. The outer layer of the blade is made of soft steel, while the core is made of very hard, carbon steel called Shirogami, or White Steel. The hand-forged and finished Tojiro Shirogami knives have a number of advantages that make them unique. These certainly include the beautiful wooden handle (from Japanese HO wood), which is also finished with a decorative ferrule. These knives are not stainless, so they must be properly cared for during daily kitchen work.
