The Japanese Fujiwara Kiridashi knife is a traditional useful tool with a 24 mm blade. Traditionally, these knives were used in Japan during woodworking and were useful not only for carving but also as marking knives. Meanwhile, now many chefs and cooking enthusiasts reach for them as handy utility knives. The small family company Fujiwara has a long, three-generation tradition of making Kiridashi knives. During production, a special Shirogami #2 steel is used, which holds its sharpness exceptionally well. It is also thanks to it that these knives are easy to sharpen.
