Traditional Japanese knife Fujiwara Kiridashi, with a 9 mm blade. In Japan, this type of knife was traditionally used for woodworking, carving, and also as a marking knife. Fujiwara can boast a long history of producing Kiridashi knives – this small family company has been forging these handy accessories for three generations. Shirogami #2 steel is used for their forging, which makes them easy to sharpen and they also maintain their high sharpness for a long time.
