Today, however, many chefs and home cooks use them as useful utility knives. Fujiwara can boast a long history of producing Kiridashi knives – this small family company has been forging these handy accessories for three generations. Shirogami #2 steel is used for their forging, which makes them easy to sharpen and they also maintain their high sharpness for a long time.
