The Japanese Kiritsuke knife, which has a wide blade profile, is a versatile tool, especially in Western cuisine. It can be described as a mixture of the best features of two well-known knives – Gyuto and Nakiri.
The successful Hado Ginsan Sakura series of kitchen knives includes knives that are 100% handmade. Shogou Yamatsuka is responsible for the blade forging process, while Tadataka Maruyama specializes in finishing and sharpening the knives. Their advantage is, among others, the hard core, which is made of a special Ginsan steel – Silver#3. On the other hand, the cladding that surrounds the core is made of stainless steel. Hardening makes the blades exceptionally hard (in the range of 62-63 HRC), and additionally, together with heat treatment, it makes each of them easy to sharpen. It’s also worth mentioning that these blades maintain their sharpness for a very long time. A characteristic feature of this series is also the octagonal cherry wood handle, which looks beautiful and fits very comfortably in the hand.
Hado is a brand of kitchen knives recommended primarily to the most demanding professionals, as well as lovers of culinary experiences who appreciate the unique art of blacksmithing from Japan.
