The Kanetsugu Pro-M chef’s knife with an 180 mm blade is recommended for most kitchen tasks – it is the most universal type of knife with a wide range of applications. The Kanetsugu Pro-M series of kitchen knives are very popular stainless knives from this Japanese manufacturer in the classic Western style. The blades of these knives are made from a single piece of AUS-8 steel, in the so-called “monosteel” technique. During hardening, the steel undergoes heat treatment (the so-called “sub-zero treatment”), during which the blades are rapidly cooled to a temperature of -70 C°. As a result, the blades achieve a hardness of 59+/-1 HRC. The blades of the Pro-M series knives have very good cutting properties, which we owe to the proper hardening and, above all, the convex grind, the so-called “hamaguri ba”. It is worth noting that the finish of the knives in this series and the fit of the handle are at a very high level. The handle is made of dark pakka wood, which has been impregnated – it is completely resistant to moisture. The ergonomically profiled handle is comfortable and provides a secure grip even during long hours of work in the kitchen. Seki Kanetsugu is a manufacturer from the city of Seki in Japan, famous for producing kitchen knives. The company was founded by Matsujiro Kawamura in 1918. He was a descendant of Kanetsugu, a famous maker of samurai swords (1336-1392).
