The Kanetsugu Saiun with a blade length of 90 mm is a smaller utility knife that will be useful for more precise tasks in the kitchen and for peeling vegetables and fruits. The Kanetsugu Saiun series of kitchen knives are beautiful and functional knives that have very impressive blades made of 33-layer Damascus steel. The core of these knives is made of high-carbon stainless steel VG-10 and has been hardened to a level of 61+/-1 HRC, which ensures that it holds its sharpness for a very long time. During production, the knives are subjected to a special process called “sub-zero treatment,” which involves very fast cooling of the blade to a temperature of -70 C°. The drastic change in temperature makes the blade harder and hold its sharpness for longer. The outer layers of the blade are a beautiful 65-layer Damascus steel polished to a high gloss. Additionally, the Damascus steel cladding the hard VG-10 steel core protects it and gives the whole thing greater flexibility. The elegant and ergonomic handle is made of Spanish micarta, which is completely resistant to moisture and temperature changes – it is perfect for the kitchen. The handle is reinforced with two rivets and diversified with an elegant, red spacer. The Seki Kanetsugu manufactory was founded over a hundred years ago by Matsujiro Kawamura, a descendant of Kanetsugu, who first began forging samurai swords in 1345.
