The SHOTOH knife from the MIYABI 5000MCD series is a combination of Japanese craftsmanship and functionality. Ideal for slicing, cleaning, and peeling vegetables and fruits, it combines a beautiful, layered blade pattern with extraordinary sharpness. Its core is a hard MicroCarbide MC63 steel, embedded in 100 layers of steel of different hardness, which provides exceptional durability. The CRYODUR® process (ice-hardening) and a hardness of 63 HRC provide excellent cutting properties. The blade is hand-ground using the Honbazuke technique on natural stones and then polished on leather strops, guaranteeing cutting precision. The ergonomic handle is made of Masur birch wood with a unique texture, providing a secure grip and comfortable work. Additional details, like the red accent and mosaic pins, highlight the knife’s elegant look. The D-shape ensures optimal balance and control during work, which makes preparing even the most complicated dishes easy. The SHOTOH knife is a combination of aesthetics and functionality in one.
