Miyagoshi Takasegawa 1000 – Sharpening Stone (#1000)

Miyagoshi Seito (宮越製陶) is a small workshop from Kyoto that has specialized in producing durable and precise whetstones for decades. The Takasegawa 1000 is a medium-grit model, intended for the daily sharpening of knives and tools. Its high effectiveness and controlled abrasive aggression make it the most universal stage of sharpening—between preliminary grinding and final smoothing.

The stone is made using the vitrification process—a mixture of abrasive and binder is molded under high pressure and fired at a temperature of about 1300°C. This allows the Takasegawa 1000 to maintain great durability, a high working flatness, and uniform abrasive properties across the entire surface.


Application of #1000 grit

The 1000 grit is the standard for daily maintenance of the cutting edge:

  • for maintaining the sharpness of kitchen blades and steel tools,
  • for removing micro-damage and leveling the blade surface,
  • as an intermediate stage between preliminary sharpening (#220–#400) and finishing (#3000+).

The Takasegawa 1000 works effectively on carbon, stainless, and powder steels—it’s suitable for both Japanese kitchen knives and workshop tools.
