Santoku is the Japanese equivalent of a chef’s knife. It is also a multifunctional knife for most kitchen tasks. In a literal translation, Santoku means “three virtues,” which refers to its three main functions – slicing, chopping, and mincing. Santoku is becoming increasingly popular among European chefs; the wider blade and smaller size make it very handy and comfortable to work with.
