A knife with a long and narrow blade—the Tojiro Shirogami Yanagiba 210 mm—is a basic tool used by sushi masters. Traditionally, it has a single-sided sharpened blade, which is perfect for cutting and slicing fish for sushi. With the Yanagiba, you can easily prepare sushi or sashimi. This knife originates from Kansai—from the Osaka region. The professional Tojiro Shirogami series contains high-quality kitchen knives in a traditional Japanese style, with single-sided sharpened blades. This makes them knives specifically created for preparing sushi and sashimi. The use of a special manufacturing technique results in three-layer blades with a very hard core (made of strong, carbon Shirogami—White Steel) and an outer layer of soft steel. The result is a knife with an impressive hardness of 61 +/- 1 HRC, whose extremely hard core is responsible for excellent cutting properties. The hand-forged and finished knives from the Tojiro Shirogami series have a wooden handle—from Japanese HO wood, which is adorned with an aesthetic ferrule. The knives require special care because they are not stainless.
