This universal Tsunehisa Nami Kiritsuke knife has a blade with a length of 240 mm. It is suitable for versatile use in a home and professional kitchen. The Japanese Kiritsuke kitchen knife will be useful for performing everyday tasks, for example, mincing vegetables or cutting larger pieces of fish and meat. Nami is a collection of hand-forged kitchen knives, the place of creation of which is the Tosa region located in Japan. A characteristic feature is the blades, which are made of 33-layer Damascus steel. It surrounds a hard core of stainless steel, the name of which is AUS-10 (it is a steel famous for its very high durability, which also holds sharpness well). The blade hardening process gives them a hardness reaching a range of 61 +/- 1 HRC. An interesting fact is that the name of the collection – Nami (“wave”) – was taken from the effect that is created on the blades. The unique Damascus pattern resembles sea waves in appearance. In addition, the knives are finished with a high gloss, which emphasizes their unique character. They have a classic Japanese handle in an octagonal shape, for the production of which a single piece of Japanese oak is used.
